This is really good and is my Favorite Baked Salmon! :)

Ingredients:
Salmon fillets, any portion or size
2 oz Lemon Juice
Chopped Onion (dried) Sprinkled on top
Garlic Powder
Mayonnaise Cover entirely
Mrs. Dash
Butter cut into pieces
Dill Weed
Paprika

Directions:
Place fish on large piece of Aluminum Foil, skin down. Cover top with Lemon Juice, to taste. Spread Mayonnaise evenly on top. Sprinkle with Onion to cover, Garlic to taste, Sprinkle with Mrs. Dash. Top with small pieces of Butter. Sprinkle with Dill Weed and Paprika.

Bake in oven (using pan) at 375 degrees. 20 minutes, or until done (Do Not overcook!) This is also go on the BBQ.

That's my all time favorite method also! Sometimes, I will substitue the Lemon with UN sweetened Orange or Lime juice. Fresh of course, not from concentrate.
I have also Zested the Lemon/Orange peel over the top of the fillet.
I always use the Barbi, even in winter. (-35+c)

Invented by a very young man last weekend:

Take one fresh pink fillet, in a marinading container (or similar)
Spread ketchup all over it.
Pour tempura dipping sauce all over it (soya sauce should work)
Sprinkle garlic powder on top.

Marinade for a couple of hours.

Wrap in foil and toss on the bbq until flesh is opaque.

Result was a firm and very tasty pink.

Cool thing was watching the chef write the details on a recipe card and file it!
If only teachers could make school that interesting then he'd write all day!

This sounds like what my mom does to salmon when she makes it (im 17 haha)
It's very yummy...oh and we usually blast the scales off beforehand.

Not a baked one

Once when we were really young and full of.... a few of us guides had a couple days off and we decided we would go....fishing. We boated a couple nice eater springs for dinner, took them home and made 4 nice filets. This is were it got crazy...

We took the filets, and with lots of $$$ and nothing to spend it on (Bamfield late 80's) we bought a few cases of brews and a couple bottles of Crown. After a few brews we decided that we would marinate a filet in the Crown :shock: and nothing else. After 8 hours in the crown, we removed the filet and covered in Miracle Whip then placed it on the BBQ and cooked it until just about done, turn the heat off and sprinkled the fish with brown sugar and let it melt into the Miracle Whip. Not sure who was the soberest to do this, but we all had a hand in it. It was and still is one of the best tasting fish I have ever had, damn expensive too!!! :D

Oh and to top off the night, we strained the Crown and enjoyed a glass each....... :o ;) but that is another story to be told around a campfire or round table :)

But if you do not want to waste good rye, then by pass that step and add garlic and what ever you want to your filet, then follow the rest as before.

Great tasting salmon
