I finally decided to change from my Little Chief to a Bradley Digital 6 rack smoker. Does anyone know where to obtain a good price on these smokers. The Nanaimo area would be where I would like to locate one.

Should have bought one when I passed through Campbell River, but hadn't compared prices yet.

Thanks for the advice. I went to HC and bought a Bradley Smoker at a very good price. They were great to deal with.

Now to get it in operation and smoke some pinks I brought back from the Eve. Hope I don't ruin the first batch while I'm learning to use the smoker. Sage wisdom gladly listened to.

Gomphus, glad to see you have joined the ranks of happy bradley smoker owners! My small bit of wisdom would be, smoke on low heat or no heat at all for your first batch... its easy to cook it more if its under cooked, but impossible to do the reverse.

Perhaps you might go to SFBC and check on Iron Noggin's receipe's for smoked and candied salmon. I chucked all of my receipes out after my first batch of each. Absolutely amazing...amazing...amazing...did I say amazing? ;) LOL And his instructions are so detailed that... well... even I could manage!
