I've had good results with cherry,apple,mesquite &
hickory but the best one for me is alder.
What's your favorite smoking chips ?

same as you Scott, I like alder and sometimes mix in some apple. I like a mild smoke flavor so I can taste the fish and seasonings.

Alder as always but lately I've been experimenting with Blackberry Yes Blackberry.

Quite a dark spicy flavoured smoke so best used in conjunction with something like Alder.

I'll be doing some Sockeye later in the week brined in Demerara Sugar/Salt and smoked w/Alder/Blackberry 50/50.

I usually stick to the fruitwoods for fish and maple, hickory or alder for doing other things like pork shoulders, bear hams, bear jerky.

Alder for salmon. hickory/apple for pork. For beef I use (separate or together) hickory, mesquite, maple.

Anybody make their own wood chips for smoking?
I heard that if you take alder wood, without the bark, then turn to chips that it works. I was doing yard work and grinding up the yard waste and was amazed at the amount of wood chips I got. Must have been three green garbage cans of chips. Now if I had used alder, I would be set for life.

I don't think it would work with wet wood. I make my own using reject alder lumber I had milled up. It takes only minutes to make a big bag with my planer [It's a big one] I set it to take off about an 1/8''. You could also use one of those hand held electric planers and make chips from branches or hunks of firewood. I'd take off the bark first though.
