Good morning, this is my first post. Great site with a lot of helpful info. I would like to try iron nogs fish candy recipe, sounds great. How many pounds of fish is required for this amount of brine? Can the brine be used for a second batch if done right away, if there is any brine left over? Thanks

You can easily scale the amount of brine you make to deal with pretty well any weight of fish. You want the fish to be covered is all.
Yes, the brine can be used for another batch. Have to do this right away as you suggested. The brine should not sit for any length of time between batches. It should also be kept right cool. I "refresh" the brine with more of the goodies when doing that - add in a tad more of the sugar and syrup, and should be good to go...
Cheers, Nog
