I have had 20 years to experiment with different smoking receipes and have never quite found that exact one! I am sure that if you can or smoke you will know that feeling. Well...I have finally done it! Well...with a HUGE, HUGE, HUGE hand from Iron Noggin. I tried his smoked salmon and Indian Candy recepies and cannot believe how good they are. They are definately the best I have ever tasted and I have tasted a LOT!

I copied the receipes exactly and, except that they took much longer on my Bradely, they worked out like a charm. I just finished 12 cases of canned salmon, 20 lbs of smoked salmon and 10 lbs of Indian Candy.

Hmmm...time to head out for some prawns and dungeness!
